Broccoli is an edible green plant in the cabbage family whose large flowering head, stalk, and small associated leaves are eaten as a vegetable. Broccoli is classified in the Italica cultivar group of the species Brassica oleracea.

Description

An old favorite with a nice twist of added broccoli, so please try this Potato and Broccoli Salad and let us know what you think.


Ingredients

Units Scale
  • 8 boiled potatoes cut in 4 or 6
  • 1 1/2 cups of Mayonnaise
  • 2 boiled eggs
  • 1 tsp. of mustard
  • 2 tsp. condensed milk
  • 1 head of Broccoli steamed till soft
  • Chopped fresh parsley
  • Salt & Pepper

Instructions

  1. Combined mayo, mustard, and condensed milk in a big bowl.
  2. Stir together, then add potato blocks, broccoli, and grated eggs into a bowl.
  3. Mix everything together, and add more mayo if needed.
  4. Finish off with salt & pepper and parsley.
