You know that moment when sweet meets salty and your taste buds throw a little party? These cookies are that moment in edible form. They’re buttery, crispy, chewy, and just plain fun to make and eat. The secret? Potato Chips. Yes, you heard that right. Let’s dive in.
Ingredients
- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/2 cup packed light brown sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon kosher salt
- 1 cup semisweet chocolate chips
- 4 cups crushed Potato Chips (Lay’s work like a charm, but any chips will do)
Instructions
- Heat your oven to 350°F (180°C).
- Line a couple of baking sheets with parchment paper, unless you love to scrub the pans after baking.
- In a stand mixer, cream the butter, granulated sugar, and brown sugar until it’s fluffy, around 3 to 5 minutes.
- Add the vanilla and eggs, then mix until nicely combined.
- Toss in the flour, baking soda, and salt.
- Mix it on low speed until it looks like cookie dough.
- Stir in the chocolate chips and half of the crushed Potato Chips.
- Roll the dough into 2-inch balls and coat them in the remaining crushed chips until they’re completely covered.
- Space the dough balls about 2 inches apart on your baking sheets.
- Bake for 12 to 15 minutes, or until the edges are golden brown.
- Let the cookies chill on the baking sheet for about 5 minutes, then transfer them to a wire rack so they can cool completely.
- If you cannot resist, sneak one while it’s warm. No judgment.
