Description

Craving a delicious, light, and refreshing meal? Introducing our mouth-watering for your next Potluck. This is the best-ever Orzo / Rice Noodle Salad, packed with fresh veggies, tender Orzo, and nuts and veggies that will leave your taste buds dancing!


Ingredients

Units Scale
  • 500g bag of Orzo Rice Noodles

Container 1:

  • 1 medium size head of broccoli
  • 6-8 spring onions
  • 3 celery ribs
  • 1 large orange pepper
  • 1 small bottle of sun-dried tomato
  • 1 small bottle of capers
  • 1 1/2 cups julienne carrot
  • 1 small bag of bacon bits

Container 2:

  • 1 bag of Orzo Noodles

Container 3:

Container 4:

  • 400g (1 tub) crumbled feta cheese

Container 5:

  • Β±18 baby tomato

Instructions

  1. Cook the rice noodles until al-dente.
  2. Strain in a colander and drizzle with olive oil.
  3. Use a fork and stir slightly to ensure that it does not clump together and get sticky.
    Set aside till cold.
  4. Cut all ingredients of container one into small pieces
  5. Then add the following capers, julienne carrot, and bacon bits
  6. Add the cold noodles and container 1 in a very large transportable dish that will seal properly and mix together.
  7. Add a large handful of container 3 to the above
  8. Lastly, add Container 4 and Container 5
  9. As I took this to a potluck, I did the final mixing at the event.
  10. Toss to mix.
  11. Then decorate with container 5 (tomato) and some crumbled feta at the very end.
  12. Note: Β All the ingredients listed can be substituted with whatever you like or prefer and the quantities can be adjusted depending on the size of the dish you wish to prepare. Β This is a very forgiving salad, so do not worry about the exact measurement of each ingredient.Β  Β After all, it’s a salad, so go wild and have fun and enjoy it.
