Our Easter cake made by my girls and I. I made the broken egg-shell by pouring melted chocolate over a balloon.The chocolate cake and icing are recipes I shared before. The nest effect on the side of the cake is broken pieces of Twirl chocolate.
Ingredients:
1 cup all-purpose flour
1 cup granulated sugar
½ cup cocoa
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
½ teaspoon coffee
½ cup milk
¼ cup vegetable oil
1 large egg
½ teaspoon vanilla
½ cup boiling water
Method:
Preheat oven to 180C
Grease round tins and line the bottom with grease proof paper
Add flour, sugar, cocoa, baking powder, baking soda, salt and coffee to a large bowl
Whisk through to combine ingredients well.
Add milk, vegetable oil, egg, and vanilla to flour mixture and mix together on medium speed until well combined.
Reduce speed and carefully add boiling water to the cake batter.
Beat on high-speed for about 1 minute to add air to the batter.
Evenly distribute cake batter in 3 small round tins
Place in the oven and bake until a toothpick inserted in the center comes out clean, about 20 minutes
Remove from the oven and allow the cakes to cool completely
Chocolate Cream Cheese Ganache
Ingredients:
100g good quality dark chocolate
1 tub fresh cream
½ tub cream cheese
Method:
Place fresh cream and chocolate pieces in a double boiler, long enough to melt, stirring occasionally.
Set aside to cool down completed.
Once semi solid add the cream cheese, mix in well.
