Ingredients
125g butter
1/4 cup icing sugar
75ml cornflour
1/8 tsp cardamom powder
1 cup + 2 Tbspn all-purpose flour
12 dates chopped into pieces
1/8 tsp orange blossom water (rose-water)
3 Tbspn water
2 Tbsps desiccated coconut
Method
Preparing the dates
Soak dates in 3 Tbspns water, on medium heat reduce to a paste.
Once water evaporates add the orange blossom water and desiccated coconut.
When paste is cool enough to handle, take prieces of it and roll into small logs.
Biscuit Dough
Preheat the oven to 180’C.
Line baking sheets with greaseproof paper
Cream butter and icing sugar, add cardamom powder and sift in dry ingredients.
Mix well to form a smooth dough.
If dough is too stiff add 1-2 teaspoons of milk.
Shaping Date Rolls
Take a piece of dough flatten in your palm, place a date log in the middle and roll long.
If you would like date rolls coated in coconut, roll each one in milk and coat with coconut before baking.
