Ingredients:
125g butter
1/2 cup caster sugar
1 Tbspn honey
11/4 cups oats
3 Tbspn dedicated coconut
1/2 cup cornflakes slightly crushed
1/4 cup flaked almonds
1/2 tsp mixed spice
75g dried apricot finely chopped
75g dried mango finely chopped
Method:
Preheat oven to 160’C
Line a small swiscroll pan with grease proof paper
Add butter, honey and caster sugar to a pan heat until sugar is dissolved.
Add the rest of the ingredients to a bowl.
Mix the wet ingredients into dry ingredient and press onto baking sheet.
Bake for about 45 minutes on until golden brown
Allow to cool completely in the pan, then refrigerate until firm before cutting
