Sausage-making is an age-old home tradition
1 kg chicken mince
120 ml sausage spice
2 sprig thyme (optional)
15 stems chives (optional)
15 stems coriander (optional)
Halal sheep casings
Mix the sausage spice with about 75ml cold water and leave to stand for about 10 minutes until all the water is absorbed.
Soak casings to cold water to remove excess salt.
Mix the chicken mince, finely chopped herbs and sausage spice .
Make sausages as per instructions on your sausage machine.
