1 salad tomato (flesh centre removed)
1 red onion
1/4 cucumber (fleshy centre removed)
5 sprigs coriander
5 sprigs parsley
1/2 Tbspn Olive oil
juice of a lemon
salt and pepper to taste
Chop all ingredients very fine
Mix all the ingredients in a bowl
Drizzle over the mixture of olive oil

, salt and pepper
