TRH Preshana's Sautéed vegetables with pasta and goats cheese
Serving for one
Ingredients:
100g cooked pasta
35g goats cheese
1/2 red onion finely sliced
1/4 courgette sliced
3 mushrooms
1/4 red pepper sliced
blob butter ( about 20g)
herbs of choice
salt and pepper to season
Method:
Put pasta to boil. Drain
Saute vegetables
Mix 3/4 of goats cheese into pasta while it’s hot.
Mix in sautéed vegetables.
Season and place remain goats cheese over the dish.
