Quick and Easy Mutton Curry

This quick and easy mutton curry will soon become your favorite bowl of comfort food

 

Ingredients
2 kg mutton
1 onion
3 tomatoes cubed
1 tomato grated
2 stem Curry leaf
Freshly ground ginger/garlic (1½ Tblspn)
5 UTD (Up-To-Date) potatoes (cut in half)
Oil (just enough to cover the base of the pot)
Salt (Adjust to suit your taste)
2 large spoonful mixed masala (I mix 1kg Osman’s chili powder with 400grm Osman’s curry powder)
3 cinnamon sticks/Aniseed (stars)
1 Tblspn crushed dry chili (optional)
1 tsp Turmeric powder
1 Tulsan Jeera powder

Method:
Heat oil in a pot, add Cinnamon, Aniseed, and sliced Onion
Add the Mutton and Freshly Ground Ginger/Garlic
Allow cooking for 15 to 20 minutes. add 1 cup water if required.
Add chopped Tomatoes, Curry Leaf and Masala, Tumeric, Jeera powder, Crushed chili, and salt
Mix well until all the meat is combined with the spice
At this point, you will notice, that this curry has no gravy don’t panic, add some boiling water and allow the meat to get tender 
Once the meat is tender, add your halved Potatoes and more water
once the Potatoes are soft add 1 grated tomato allow to simmer for 5 minutes.
Then remove from the stove
Garnish with Coriander or Parsley, serve with Carrot salad Roti/Rice
