Raisin Rib Roast

My all-time wonderful Raisin Rib Roast

This was approximately 2.5kg’s Raisin Rib
Salt, Origanum, sage, thyme, rosemary etc – any spice that you love.

Preheat oven to 200C
Put about 1 tablespoon oil at bottom of roasting pan
Put roast in and spice with all your spices
Cover over with more oil till roast is covered
Cover with lid and into oven
Leave I’m at 200C for about 1/2 hour and then turn down to 120C for about another hour and check – all this now depends on how you like your meat.
Take our if ready and slice thinly. Make gravy using the oil as it has the juices from the meat.
Layer your sliced meat in and soak in the gravy.
