Rashida's Chicken Strips Cubed and Prawn with Mediterranean Rice
You need to taste this moorish mediterranean with chicken and prawns dish
250g chicken fillet cut into strips or cubed
250g pawns. optional
2 tbsp fresh lemon juice
1/2 tsp garlic paste
1/2 tsp chilli paste
2 tbsp peri-peri braai marinate
3 tbsp mayonnaise
3 boiled eggs, optional
Salt to taste
Marinate all the above for 3-4 hrs
Except the eggs
1½ cups rice basmati or tastic
2 onion finely chopped
1 med tomato diced
1 cup mixed vegetables
3 colour peppers cut in Julianne strips
1/4 tsp fine black pepper
1/4 tsp whole cumin.
Salt to taste
Ghee/oil for braising
Boil rice with 1/2 tsp turmeric powder and set aside.
Braise onion and cumin until soft and slightly brown.
Add in rest of the ingredients and cook for 6-7 minutes.
Now add in the cooked chicken/prawn into the rice and then mix vegetables and give it a good mix, using a fork.
Slice eggs and set over rice.
Garnish with fresh dhania.
Serve hot and enjoy
