Ingredients:
250 g butter or margarine
200 g (250ml) sugar
500 g dates, chopped
4 g (10ml) cocoa powder
2 eggs, slightly beaten
5 ml vanilla essence
4 x 200 g packets Marie biscuits, roughly broken
30 g castor sugar
Method:
Melt butter, sugar and dates in a large saucepan, stir until mixture is soft and smooth.
Stir in cocoa powder, cool slightly.
Add eggs and vanilla, stir over low heat, do not allow to boil.
Remove from heat, add in biscuits, stir until well combined.
NB…You can use all the mixture and pack firmly into a well-greased 430 mm by 300 mm baking tray.
Place a greaseproof paper over biscuit and roll until flat with a rolling-pin until flat and compressed.
Place in fridge to set, cut in squares and dust with castor sugar, or divide into 3 parts.
DATE balls ROLLED in coconut and drizzle milk chocolate.
To make triangle..Melt 100 g milk chocolate and mix in.
Place mixture on foil and shape..Use a knife to smoothen the side.
Place in fridge to set and slice.
