Fluffy and moist Eggless Vanilla Cupcakes – super easy to make
1/2 cups cake flour
1/2 tsp Bicarbonate of soda
3/4 tsp baking powder
1 cup castor sugar
1/2 cup butter
3/4 cup yoghurt
1/2 cup milk
1/2 tsp vanilla essence
1/2 tsp lemon zest
1/4 cup lemon juice
1/4 tsp salt
Sift dry ingredients and set aside.
Beat butter and sugar till creamy 4-5 minutes.
dd lemon juice, zest and vanilla and beat.
Add 1/2 yoghurt and 1/2 sifted flour beat in.
Then add rest of yoghurt, flour and milk and mix well.
Pour into well-greased tin n bake 180 for 35-40 min.
Cool and Ice as desired
