07 Feb Rashida's Fried Fish, Potato Wedges and Baked Sweet Potato
1/2 kg fresh fish of choice
Wash and pat dry
In a small bowl make a paste with:
2 tsp chilly powder
1 tsp kashmir masala
1 tsp jeera powder
1 tsp dhania powder
1tsp lemon juice
3 tblsp oil
Mix spices well, taste if needed and add more.
Smear the fish and leave to marinate for a few hours.
Fry in med to hot oil for 5 minutes, turning once. Drain on paper towel.
Potato wedges fried in deep oil, drain on paper towel and sprinkle with potato spice
Sweet potatoes wash and peel, using a potato peeler
Spread on a baking tray and drizzle olive oil
Place in hot oven turning every few minutes, till light in colour
