Ingredients
125g butter
1 cup sugar
2 eggs
1 tsp vanilla essence
Grated rind of 1 lemon (optional)
2 cups flour
2 tsp baking powder
Pinch salt
1 cup milk
Method:
Cream butter n sugar till light and fluffy
Beat eggs one at a time, add vanilla and rind
Sift flour, baking powder and salt
Add to cream mixture, alternatively with milk
Grease loaf tin and bake 180C for 1 hour

Texture is soft and light
