Rashida's Masala Chicken

Ingredients:
1 chicken washed and cut in bite size pieces
2 tbsp ginger garlic paste
30 ml lemon juice
60g butter
1 small sachet tomato paste
2 tsp chili powder
1 tblsp tomato sauce, adjust to taste
Salt to taste
Method:
Add chicken into a bowl.
Add all the spices and mix well.
Leave to marinate for few hours or overnight.
Heat butter or ghee and add chicken.
Cover and allow chicken to cook on low until done.
Remove the lid and cook until the sauce has reduced and chicken is well coated
Served with rotis, potato crisp and salads

    • Thank you Priya. Hope you have a wonderful day as well. At least it’s my one day a week off so that already makes for a happy day. Then to be testing in the kitchen adds for a second portion of happy. The third happy will be if the testing turns out well and I can share it here, but that remains to be seen. Watch this space ….
