Rashida's Simple Chocolate Oil Cake

3 eggs
3/4 cup sugar, +3 tbsp
1/4 cup oil
5 ml vanilla essence
1/4 cup cocoa
1/2 cup hot water
1 cup cake flour
10 ml baking powder
Beat eggs and sugar together until light and fluffy.
Add vanilla and oil, beating well.
Dissolve cocoa in hot water and fold into the egg mixture, alternatively with the sifted flour and baking powder.
Grease pans and Gently pour the mixture into 2X20 cm sandwich tins.
Bake on 180 for 20 -25 min.
Chocolate Icing
125g soft butter
1 1/4 cup sifted icing sugar
3 tbsp sifted cocoa
1 tsp vanilla essence
Beat butter
then add rest of the ingredients.
Beat till nice and light
