Peel six large potatoes and grate coarsely.
Grate 1/2 onion into the potatoes
Drain off the fluid then mix in a ½c plain flour
Salt and pepper to your preferred taste
Add 1/4 cup white sugar and mix well.
Heat oil in a large fry pan
Using slotted spoon whatever size you like, press mixture so any liquid is drained through the slots then gently turn out into hot oil!
Fry till golden and turn over. Usually 4-5 minutes per side.
When both sides nicely browns drain on kitchen towel till all latkes are done !
Best if eaten immediately but can be kep warm in the oven if need be. They may not be as crunchy though.
I sprinkle with all season or aromat when they are done !
Absolutely delicious.
I get about 16-18 latkes from 6 large potatoes.

Hi Renee, your recipe seems to be almost identical to mine. I made Latkes on the first night and they were beautiful. The difference is that I only put one teaspoon of sugar, but then I eat mine with salt and pepper. Max eats with sugar cinnamon. Enjoyed your input.
