Ingredients
1½ cups all purpose flour
¾ cup sugar
½ tsp bicarbonate soda
½ tsp salt
1 Tbsp. Cocoa
¾ cup sunflower oil
½ cup coconut milk + 1 tablespoon vinegar
1 flax egg
Method
Bake in baby cake pop machine.
Sift together dry ingredients
Mix together wet ingredients
Combine wet and dry inbred to form a batter
Fill pop machine cavity and bake as per machine directions and for toothpic to come clean.
Place the pop balls in the fridge till ready to decorate, and they’re cold and firm.
Melt white chocolate. We also used brown chocolate for the vegan version as one do not find white vegan chocolate.
Melt your chocolate in the microwave in 30 second bursts till just melted.
It should not be to hot, thin and runny, as it will not stick properly to the cake pop.
Use a toothpick, and pic up the ball, dunk it in the slightly cooled chocolate.
You can either just place it on parchment paper or as we did, use a square pretzel at the bottom and then place the chocolate ball on top of it, in order for the ball not to roll around.
Wait till the chocolate is semi dry, then add a mini Oreo cookie for the hat.
Let it settle but it should still be slightly sticky, then add any small candy of your choice, to create the eyes and nose.
We left it overnight, to ensure it’s solid and you can pick it up, then create by piping a mouth with decorating icing.
