  • Yield: 4–6 servings depending on size 1x
  • Category: Dinner Recipes
  • Method: Easy Cooking

Ingredients

Scale
  • 9 beef sausages
  • 5 large potatoes, peeled and cut into medium bite sized cubes
  • 4 medium tomatoes, grated
  • 1 large red onion, grated
  • 2 tsp minced garlic
  • 1 to 2 tbsp olive oil
  • 1 can baked beans in tomato sauce (about 398 mL)
  • Salt, to taste
  • Aromat seasoning, to taste
  • Black pepper, to taste
  • A pinch of paprika
  • A pinch of dried sweet basil
  • To serve: Mixed salad and bread rolls

Instructions

  1. Preheat your oven to 400⁰F (200⁰C). Lightly grease a large ovenproof baking dish with cooking spray.
  2. Add the 5 large cubed potatoes, 4 grated tomatoes, 1 grated red onion and 2 tsp minced garlic to the baking dish. Sprinkle with salt, Aromat seasoning, black pepper, a pinch of paprika and a pinch of dried sweet basil. Drizzle over 1 to 2 tbsp olive oil and toss everything together until the potatoes are well coated in the tomato mixture.
  3. Cover the dish loosely with foil and bake for 25 minutes. Give the mixture a good stir, making sure the potatoes are coated in the juices. Cover again and bake for another 10 to 15 minutes, until the potatoes are beginning to soften. If the mixture looks dry, add a small splash of water.
  4. Nestle the 9 beef sausages into the potato mixture. Turn them once so they pick up some of the tomato juices. Return the dish to the oven, uncovered, for 15 to 20 minutes, turning the sausages halfway through. Check that the sausages are thoroughly cooked, as cooking time will depend on their size.
  5. Stir in the can of baked beans in tomato sauce, spreading them through the potatoes and around the sausages. Return the dish to the oven for 5 to 10 minutes, just long enough to heat the beans through and bring everything together. If the potatoes need more time, keep baking until they’re fork tender, adding a splash of water if needed.
  6. Let the bake rest for about 5 minutes before serving. Dish it up with mixed salad and fresh bread rolls to mop up that lovely tomato sauce.

Additional Information and Tips

  • Can the dish be prepared ahead? You can grate the tomatoes and onion, mince the garlic and cut the potatoes shortly before cooking. If cutting the potatoes ahead, keep them submerged in cold water in the refrigerator, then drain and dry them before adding them to the dish. For the best texture, bake the casserole shortly before serving.
  • How do I know the potatoes are cooked? Cut them into evenly sized, medium bite-sized cubes. Test the largest pieces with a fork before adding the baked beans. They should be tender all the way through. If they’re still firm, continue baking and check again after 5 to 10 minutes.
  • How can I prevent the sausages from drying out? Add the sausages after the potatoes have started softening, and avoid overcooking them. Cooking times depend on their size and type. Check that the centre reaches a safe internal temperature of 160⁰F (71⁰C) for beef or pork sausages, or 165⁰F (74⁰C) for chicken or turkey sausages.
  • What if the tomato sauce is too watery? Bake uncovered for the final stage to allow excess liquid to evaporate. If the mixture becomes too dry before the potatoes soften, add a few tablespoons of water and cover the dish again.
  • Can I use canned tomatoes instead of fresh tomatoes? Yes. Replace the 4 medium grated tomatoes with approximately 400 g canned chopped tomatoes. Depending on how much liquid they contain, you may need to adjust the amount of added water.
  • Can I replace Aromat seasoning? Yes. Use an all-purpose seasoning blend, or season with salt, black pepper, paprika and dried basil. Since baked beans and seasoning blends can contain salt, taste the mixture before adding extra.
  • Can I use another type of sausage? Pork, chicken or turkey sausages are suitable alternatives. Check the cooking instructions and safe internal temperature for your chosen variety.
  • Which vegetables can I add? Chopped carrots and bell peppers can go in with the potatoes. Mushrooms and zucchini can be added later to help prevent them from becoming too soft.
  • Can I make the dish less salty? Reduce or omit the added salt and use less Aromat. Choose lower-sodium baked beans if available, and adjust the seasoning after adding them.
  • How should leftovers be stored? Transfer leftovers to shallow, airtight containers and refrigerate within 2 hours of cooking. Keep refrigerated for 3 to 4 days and reheat until steaming hot throughout.
  • Can leftovers be frozen? Yes. Cool the dish promptly, divide into airtight freezer containers and freeze for up to 2 to 3 months for best quality. Thaw in the refrigerator before reheating. The potatoes may soften or change texture after freezing.
  • What should I serve with this bake? Mixed salad and bread rolls complement the tomato sauce. Steamed green vegetables or crusty bread are also good choices.
  • Cover the potatoes during the first stage of baking, so they soften before the sausages and beans are added.
  • Stir periodically to coat the potatoes in the tomato juices and help prevent sticking.
  • Add the baked beans near the end so they heat through without breaking down excessively.
  • Use a sufficiently large ovenproof dish to spread the ingredients out rather than packing them too tightly. This helps the potatoes cook more evenly.
