Sunday brunch was a Dutch baby (German pannekoeken/pancake) filled with sausages, sautéed peppers, onions, and zucchini then topped with soft fried eggs.

- 3 large Eggs
- 1/2 cup Flour
- 1/2 cup Milk
- 1 tsp Paprika
- 1 tsp Garlic Powder
- 1 tsp Mixed Herbs
- Salt & Pepper to taste
- 2 Tbsp. Butter
- 2 Tbsp. Butter (for the pan)
Instructions
- Add all the ingredients to a blender and blend until foamy and allow the batter to rest for about 20 minutes.
- Preheat the oven to 200°C / 400°F then place an oven-proof/cast iron skillet into the oven to warm.
- Remove the hot pan from the oven and add in the butter then quickly pour the batter in (to prevent the pan from cooling) and return the pan to the oven to bake for about 20 minutes or until the pancake is golden, risen and puffy.
- Remove from the oven and add your fillings, grate over the cheese, serve and enjoy!!
