Tacos for dinner maybe?
Easy to make and even keep for a few days of meals.
Using Mortadelo (or any big diameter ham slice) as the taco/wrap/burrito.
Ingredients
12 large eggs
12 strips of bacon
12 Mortadelo ham slices
Salt and pepper to taste
Method
Cut bacon into small cubes or strips, fry until crispy (or to your liking). Put aside. Keeping the rendered fat.
Whisk eggs till fluffy adding salt and pepper to season.
Scramble (I like more of a omlet style firmness) eggs in hot pan and oil.
Dish out evenly into ham slices as below.
Lay ham slices down and fill half of a side with eggs and bacon.
Fold over creating a pocket and secure with a toothpick if needed.
Transfer two pockets to hot pan and fry till golden and slightly crispy, turning over at least once.
Serve either as is or over a bed of lettuce with balsamic (or apple cider vinegar). Enjoy.
Store leftovers in the fridge in an airtight container for up to 5 days. Heat over medium heat (or a few seconds in the microwave)
Makes 6 servings (2 pockets each)
