Description
Sedgwick Saucy Malva Magic is a cozy dessert with a soft sponge and a rich Old Brown sauce. A perfect option for easy entertaining and simple sweet comfort.
Ingredients
Pudding
- 310 ml cake flour
- 10 ml bicarbonate of soda
- 1 ml salt
- 2 eggs
- 250 ml castor sugar
- 30 ml butter
- 125 ml buttermilk
- 15 ml apricot jam
- 2.5 ml grated orange zest
- 60 ml orange juice
- 15 ml vinegar
Sauce
- 125 ml butter
- 125 ml soft brown sugar
- 125 ml Sedgwick’s Original Old Brown
- 125 ml cream
Instructions
- Heat your oven to 180°C/350°F and butter six 125 ml moulds so nothing sticks later.
- In a large bowl, sift together 310 ml cake flour, 10 ml bicarbonate of soda, and 1 ml salt.
- In another bowl, whisk 2 eggs and 250 ml castor/caster sugar until the mixture looks pale and a bit fluffy.
- Warm 30 ml butter, 125 ml buttermilk, 15 ml apricot jam, 2.5 ml orange zest, 60 ml orange juice, and 15 ml vinegar in the microwave just until the butter melts. Give it a quick stir so the jam blends in properly.
- Fold the dry ingredients and the warm buttermilk mixture into the egg mixture, alternating between the two.
- Don’t overmix, or your pudding will not stay soft.
- Fill the moulds about three-quarters full, set them on a baking tray, and bake 20 to 30 minutes until a skewer comes out clean and the tops look lightly browned.
- While they bake, melt 125 ml butter, 125 ml soft brown sugar, 125 ml Sedgwick’s Original Old Brown, and 125 ml cream in a small saucepan over low heat. Heat it just until the sugar dissolves, and it turns glossy.
- Turn the hot puddings out, poke a few holes into each one, and pour the warm sauce over so it soaks right in.
- Keep the rest of the sauce on the side. Make sure you serve yourself first because these tend to disappear fast.
