My kids enjoyed it thoroughly and said it tastes like KFC!
Rinse 1kg chicken pieces and steam for 15mins.
Remove drain and cool completely.
Season with salt and ground black pepper to taste.
Whisk 2 eggs and 1/4 cup milk
In a wide, shallow bowl combine 2½ cups crushed cornflake, 2tsp salt and ½ tsp ground black pepper.
Dip the cooled chicken pieces into the egg mixture then coat with corn flakes mixture, patting with your fingers to make the cornflakes stick.
Place in tray and drizzle oil over chicken and bake in preheated oven @ 180C until chicken is golden and crisp, for about 30 minutes.
Also made baked beans which I braised in a little oil with onion, green pepper and tomato.
For the mash I steamed the potatoes with salt, and when nearly done added butter and mash it.
For the butternut, I chopped it into cubes and steamed it with salt.
When its done you mash it and add butter and a little cinnamon powder
We used ready-made chicken gravy! Enjoy!
