Ingredients

Pork chops

  • 4 bone-in pork chops
  • 1 cup softened butter
  • 2-3 tsp of freshly minced garlic in olive oil (this is the key ingredient).
  • 2 tsp Parmesan cheese
  • 1/2 tsp salt
  • 1/2 tsp fresh pepper
  • 1/2 tsp paprika
  • 1/2 tsp oregano
  • 1 tbsp olive oil
  • 2 tsp lemon juice
  • 2 tsp freshly chopped parsley.

Ingredients for spice rub for Grecian potatoes

  • 1 tsp seasoned salt
  • 1 tsp ground black pepper
  • 1 tsp Sweet Paprika
  • 1 tsp Rosemary
  • 4 large potatoes, peeled, washed, cut into wedges
  • 8 large garlic cloves, chopped
  • 4 tablespoons extra virgin olive oil
  • 1 lemon, juiced
  • 1 1/4 cup vegetable or chicken stock
  • 1/2 cup grated Parmesan cheese
  • 1 cup parsley, roughly chopped

Instructions

Chops

  1. Make sure pork chops are patted dry and are at room temperature.
  2. Mix spices in a bowl and add olive oil and lemon juice.
  3. Rub over chops on both sides.
  4. Set aside as long as possible.
  5. Place pork chops on a hot grill and turn each side every few minutes until the desired temperature. (I air-fried for 12 minutes turning halfway).
  6. In a saucepan melt butter until foamy, then add garlic and olive oil and pour over generously over pork chops
  7. Serve immediately garnished with parsley

Potatoes

  1. Preheat oven to 200C/400F.
  2. In a small bowl, mix spices. Set aside.
  3. Place potato wedges in a large lightly oiled baking dish and sprinkle with the spice mix.
  4. Toss potatoes together briefly to evenly distribute spices.
  5. In a bowl, whisk together chopped garlic, olive oil, lemon juice, and stock.
  6. Pour into the baking dish with potatoes.
  7. Cover the baking dish with foil and place in the oven for 40 minutes
