Pork chops
- 4 bone-in pork chops
- 1 cup softened butter
- 2–3 tsp of freshly minced garlic in olive oil (this is the key ingredient).
- 2 tsp Parmesan cheese
- 1/2 tsp salt
- 1/2 tsp fresh pepper
- 1/2 tsp paprika
- 1/2 tsp oregano
- 1 tbsp olive oil
- 2 tsp lemon juice
- 2 tsp freshly chopped parsley.
Ingredients for spice rub for Grecian potatoes
- 1 tsp seasoned salt
- 1 tsp ground black pepper
- 1 tsp Sweet Paprika
- 1 tsp Rosemary
- 4 large potatoes, peeled, washed, cut into wedges
- 8 large garlic cloves, chopped
- 4 tablespoons extra virgin olive oil
- 1 lemon, juiced
- 1 1/4 cup vegetable or chicken stock

- Place potato wedges in a large lightly oiled baking dish and sprinkle with the spice mix.

- In a bowl, whisk together chopped garlic, olive oil, lemon juice, and stock.
- Pour into the baking dish with potatoes.
- Cover the baking dish with foil and place in the oven for 40 minutes
