Slow Cooker Roast Chicken and Veggies.
This is such a yummy way to indulge in a lazy afternoon and tossing everything in a slow cooker, and in 5+ hours or so you have succulent
1 whole chicken
3 tbsp softened butter
Zest of 1 lemon (then quarter the lemon)
2 garlic cloves, minced
Smoked paprika – 1 Tsp
Hot paprika – 1 Tsp
BBQ spice – 1 Tsp
Chicken spice – 1 Tsp
Celery salt – 1 Tsp
Seasoning salt – 1 Tsp
Vegeta (Aromat) – 1 Tsp
Black pepper – 1 tsp
Parsley, thyme, oregano – ½ tsp each
A few sprigs of fresh rosemary
You can use vegetables of choice.
I used potatoes (quartered), carrots (diagonally sliced) and green beans.
Mash the butter, garlic, and lemon zest.
Add the remaining seasoning and herbs (except rosemary ).
Season inside of the chicken with the same seasoning, insert lemon quarters and rosemary.
Slowly lift the skin of the chicken and insert half the seasoned butter pressing back under the skin.
Rub the remaining seasoned butter all over the chicken.
Layer the vegetables at the bottom of the slow cooker.
Season with Vegeta and pepper. Place chicken on top. Close lid.
Cook on high 4-5 hours or on low 7-8 houŕs.
Place under oven grill 5-10 minutes to crispen.
