Description

Sometimes you just need something sweet right now, and these little coconut bites totally deliver. They’re soft, creamy, and if you tuck in pieces of red velvet cake, you get the prettiest surprise with each bite.


Ingredients

Units Scale
  • 1 cup desiccated coconut, plus extra for rolling
  • 1/2 cup sweetened condensed milk
  • 1/2 cup (you can use whatever amount you like or have) small pieces of red velvet cake, optional

Instructions

  1. In a medium bowl, mix 1 cup of desiccated coconut and 1/2 cup sweetened condensed milk until fully combined.
  2. Scoop about 1 tbsp of the coconut mixture into your hand.
  3. If you’re using the red velvet cake, press small pieces into the ‘dough’ and gently roll the coconut mixture around it to seal. If not using cake, simply roll into a smooth ball.
  4. Roll each ball in a little extra desiccated coconut to coat.
  5. Place the truffles on a lined tray and chill in the fridge for 20 to 30 minutes until firm. 
  6. Store in an airtight container in the fridge for up to 5 days.
