Ingredients
Dough:
- 4 cups all-purpose flour
- 1 package dry yeast (about 2 1/4 tsp)
- 3/4 cup milk
- 1/4 cup granulated sugar
- 1/4 cup warm water (about 115°F)
- 1/4 tsp vanilla extract
- 1 large egg
- 1 tsp salt
- 1/4 cup unsalted butter, melted
- 1/4 cup melted butter (for brushing before baking)
Filling:
- 1/3 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 1/2 tbsp ground cinnamon
Secret Ingredient:
- 1/2 cup heavy cream (poured over rolls before baking for gooey centers)
Instructions
- In a small bowl, mix ¼ cup warm water with 1 tsp of granulated sugar.
- Sprinkle 1 package of yeast over the top and let it sit about 5 minutes, until foamy.
- In a large mixing bowl or stand mixer, add ¾ cup milk, ¼ cup sugar, ¼ cup melted butter, ¼ tsp vanilla, and 1 egg.
- Add 2 cups of the flour and the yeast mixture, then mix until combined.
- Slowly add the remaining 2 cups of flour and 1 tsp salt.
- Mix on medium speed for 5–7 minutes (or knead by hand about 10 minutes) until the dough is smooth and elastic.
- Lightly oil a large bowl, shape the dough into a ball, and place it inside.
- Cover with cling film or a towel and let it rise 1–2 hours, until doubled.
- In a small bowl, combine ¾ cup brown sugar, ¼ cup granulated sugar, and 1½ tbsp cinnamon. Set aside.
- Punch down the dough and roll it out on a lightly floured surface into a 15×9-inch rectangle.
- Spread ⅓ cup softened butter all over the dough, then sprinkle evenly with the cinnamon-sugar mix.
- Starting from the long edge, roll the dough tightly into a log.
- Cut into 16 even slices and arrange them cut-side down in a buttered baking dish.
- Cover and let rise again about 1½ hours, until puffy.
- Just before baking, pour ½ cup heavy cream evenly over the rolls. This is the trick that makes them melt-in-your-mouth gooey!
- Preheat oven to 350°F (175°C).
- Brush the rolls with ¼ cup melted butter and bake for 25–30 minutes, until golden brown.
- Let them cool slightly on a wire rack.
- Dust with icing sugar or drizzle a simple vanilla glaze if you like.
