  • Can I leave out the egg? Yes. The pudding is still rich and creamy without it, making it suitable for a vegetarian version.
  • Can I skip the saffron? Absolutely. The saffron adds colour and a subtle floral flavour, but the pudding is still delicious without it.
  • How thick should the pudding be? It should coat a spoon easily while still being soft enough to serve. It will continue to thicken slightly as it cools.
  • Can I add more milk later? Yes. If the pudding thickens more than you’d like, stir in a little warm milk before serving until you reach your preferred consistency.
  • Can this be frozen? Yes. Freeze in airtight containers for up to 2 months. Thaw overnight in the refrigerator and gently reheat, stirring in a splash of milk if needed.
  • How long can this be stored and how? Store covered in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave, adding a little milk if the pudding has thickened.

Ingredient Substitutions

  • Replace Tastee Wheat with fine cracked wheat or cream of wheat if unavailable.
  • Swap nibbed almonds for chopped almonds, pecans or cashews.
  • Replace sultanas with raisins or chopped dates.
  • Use ground cardamom if freshly ground isn’t available.
  • Omit the egg for a vegetarian version.
  • Use evaporated milk in place of some of the regular milk for an even richer pudding.

Description

A rich, creamy dessert that’s wonderfully fragrant with cardamom, cinnamon, and saffron. It’s simple enough for family dinners yet special enough for celebrations, and it’s one of those recipes that fills the whole kitchen with an incredible aroma while it cooks.


Ingredients

  • 1 1/2 cups Tastee Wheat
  • 8.8 oz250 g butter
  • 2 to 3 cinnamon sticks
  • 1/4 cup desiccated coconut
  • 1/4 cup nibbed almonds
  • 1/4 cup sultanas
  • Pinch of saffron (optional)
  • 1 tsp freshly ground cardamom (elachi)
  • 1.25 cups1 x 300 ml tin condensed milk
  • 1.7 cups1 x 400 ml tin coconut milk
  • 1 egg, lightly beaten (omit for a vegetarian version)
  • 2 cups milk

Instructions

  1. Place the 250 g butter into a large, heavy-based saucepan and melt over medium heat.
  2. Add the 1½ cups Tastee Wheat, 1/4 cup desiccated coconut, 1/4 cup nibbed almonds, 1/4 cup sultanas, 2 to 3 cinnamon sticks, the pinch of saffron (if using) and 1 tsp freshly ground cardamom.
  3. Cook for about 10 minutes, stirring often, until the wheat turns lightly golden and smells nutty. The mixture should look grainy and lightly toasted. 
  4. While the wheat is toasting, whisk together the 1 tin condensed milk, 1 tin coconut milk, 1 lightly beaten egg and 2 cups milk until completely smooth.
  5. Slowly pour the milk mixture into the toasted wheat while stirring continuously. Adding it gradually helps prevent lumps from forming.
  6. Return the saucepan to medium heat and cook for about 15 minutes, stirring regularly, especially along the bottom of the pan, until the pudding becomes thick, creamy and the wheat is fully cooked.
  7. Remove the cinnamon sticks before serving if preferred.
  8. Serve warm on its own
