Soya Mince and Potato Curry

Soya Mince and Potato Curry is ideal for Meatless Mondays or vegetarians

Ingredients:
1 cup soya granules.
1 cup boiling water
1 tsp white wine vinegar.
3 potatoes, peeled and cubed.
Salt and pepper to season.
Generous pinch of asafetida powder.
1 onion, finely chopped.
2 tomatoes, grated
1 tbsp. grated ginger.
3 cloves garlic, grated.
¼ tsp turmeric powder.
1 tsp masala.
1 tsp dhania powder.
1 tsp garam masala.
Fresh coriander to garnish.

Method:
Soak the soya granules in the boiling water and vinegar, give it a good stir, and set aside.
In a pan, heat some oil.
Fry the potato cubes on medium heat until slightly golden brown, they do not have to be cooked through, they will still be slightly raw.
Remove from the oil and allow to drain on a paper towel for now.
Heat some oil in a pan, over medium heat.
Add the asafetida powder and give it a good stir.
Add the onions and sauté until transparent.
Add the tomatoes and salt and allow to cook until the tomatoes are soft.
Add the grated, ginger, and garlic and give it a good stir.
Add the turmeric powder, masala, coriander, stir and allow the mixture to come to a boil.
Add the soya mince with the water and vinegar and the fried potatoes.
Add enough water to cover the mixture, cover with a pot lid and allow to cook until the potatoes are done.
Remove from the heat, sprinkle with garam masala and chopped coriander.
