Ingredients
Ingredients for meatballs
- 10–12 mint leaves
- 1/4 bunch of coriander leaves, with stems
- 1 red onion
- 1 green chili
- 1 tbsp. garlic/ginger paste
- 1 tbsp. red wine
Process in a food processor and keep aside.
- 1 kg mince (of choice)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 tsp dhania/jeera powder
- 1 tsp seasoned salt
- 1 egg
- 1/4 cup breadcrumbs (or use bread soaked in water)
- 1 egg
- 1 tbsp. soy or Worcestershire sauce
- Oil for frying
Sauce
- 1 can onion and tomato mix
- 1 can baked beans in tomato sauce.
- 1 tsp garlic (you can also add ginger and chili if you prefer)
- Salt and pepper to taste
- 1/2 cup chicken/beef stock
- 1 tsp dhania/jeera powder
- 1 tbsp finely minced fresh coriander with stems + extra for garnish
Instructions
- Mix mince with all the ingredients but be careful not to overcook.
- Using an ice cream scoop to form uniform balls and set them aside for ½ hour.
- Fry in medium hot oil (about 2cm deep) until just browned on both sides but not cooked through all the way.
- Drain on a paper towel.
- Drain oil from meatballs, leaving about 1 tbsp. and then add garlic/ginger/chili as well as onion and tomato mix.
- Simmer for 5 minutes on low.
- Add all the remaining ingredients except for baked beans.
- Bring to a gentle simmer, but keep it uncovered.
- Add meatballs, cover with a lid, turn down the heat to low, then simmer for 5-7 minutes.
- At this point, the meatballs should be cooked through.
- Lastly, add the baked beans around the meatballs and lightly stir through.
- Garnish with coriander.
- Serve with rice and buttery gem squash or whatever you prefer.
