Juicy marinated steak layered with fresh rocket makes this an easy lunch you will crave again. Simple ingredients, bold flavor, and zero fuss.
Ingredients
- 1/2 lb steak
- 1/2 tsp steak spices
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 cup Steers steak marinade
- 2 packed cups of fresh rocket
- 1 Tbsp olive oil
- 1 tsp lemon juice
Instructions
- Place the 1/2 lb steak in a shallow dish and pour over 1/2 cup Steers steak marinade.
- Turn the steak so it’s fully coated, then let it marinate for at least 20 minutes. If you’ve got time, longer is even better.
- Remove the steak from the marinade and pat it lightly with a paper towel.
- Season both sides with 1/2 tsp steak spices, 1/2 tsp salt, and 1/2 tsp pepper.
- Heat a pan over medium-high heat and add a light drizzle of oil.
- Cook the steak for about 4 to 5 minutes per side, depending on thickness, until it’s cooked the way you like it.
- Remove the steak from the pan and let it rest for 5 minutes. Don’t skip this part; it keeps the steak juicy.
- While the steak rests, toss 2 cups fresh rocket with 1 Tbsp olive oil and 1 tsp lemon juice.
- Keep it simple; the rocket does its own thing.
- Slice the rested steak against the grain.
- Stack the steak slices neatly on a plate and top with the dressed rocket.
- Spoon any resting juices over the steak and serve right away.
