Sticky Ginger Garlic Chicken and Sweetcorn Soup proves that contrasting flavours can work beautifully. The result is a dinner with plenty of variety from the first bite.
The contrast between the two dishes is what makes it work. Try this Sticky Ginger Garlic Chicken and Sweetcorn Soup for an interesting dinner combination.
Why You Will Love This Meal
- Big flavour without complicated cooking: The chicken brings sticky ginger garlic flavour while the soup is savoury, creamy and comforting.
- They work beautifully together: The sweetcorn soup is mild enough to balance the bold marinade on the chicken.
- Great for a family meal: Both recipes use familiar ingredients and can be prepared ahead, making dinner a whole lot easier.
A Few Things Worth Knowing
- The two recipes have very different textures, which is part of what makes them work together. The chicken is savoury, sweet and sticky, while the soup is soft, creamy and delicate.
- For the chicken, don’t rely only on the cooking time. Chicken pieces vary considerably, so 165⁰F (74⁰C) is the reliable point to aim for.
- For the soup, the egg yolks should be tempered before they’re added, while the egg whites should be drizzled slowly into gently simmering soup. Those two little steps make a noticeable difference.
- And one important kitchen rule: raw chicken marinade isn’t automatically a sauce. If you want to turn it into one, boil it thoroughly before serving.

Additional Information for Sticky Ginger Garlic Chicken
- Can I use different chicken pieces? Yes. Chicken thighs, drumsticks, wings, and chicken breasts all work. Just remember that cooking time will vary depending on size and whether they’re bone-in or boneless.
- Can I use boneless chicken breast? Yes, but watch it carefully because breast meat can dry out. Use the internal temperature rather than the clock as your guide.
- Can I use chicken thighs? Absolutely. Chicken thighs are particularly good here because they stay juicy and handle the marinade beautifully.
- What can I use instead of Shaoxing rice wine? Dry sherry is the easiest substitute. You can also replace it with an equal amount of water, although the finished chicken won’t have quite the same depth of flavour.
- Can I use light soya sauce? Yes. The colour and flavour will be slightly different, and light soya sauce can be saltier, so taste before adding additional salt.
- How long can I marinate the chicken? At least 3 hours works well. You can also marinate it overnight. Keep the chicken refrigerated and don’t leave it marinating for more than about 24 hours.
- How should leftovers be stored? Refrigerate cooked chicken in a covered container within 2 hours. It will keep for 3 to 4 days.
- Can I freeze it? Yes. Cool the cooked chicken completely, then freeze it in an airtight freezer container or freezer bag for up to 3 months for the best quality.
- Important: Don’t use the leftover raw chicken marinade as a sauce unless you boil it thoroughly first.
Additional Information for Chicken Sweetcorn Soup
- Can I use boneless chicken? Yes. Use 2 boneless, skinless chicken breasts, but start checking them earlier because they’ll cook faster.
- Can I use chicken thighs? Yes. Chicken thighs add even more flavour and stay tender.
- What can I use instead of cream-style sweetcorn? Use 1 can whole kernel sweetcorn, drained. For a creamier texture, pulse some of the corn with a little soup before returning it to the pot.
- What can I use instead of corn starch? Use about 2 tbsp all-purpose flour mixed with a little cold water. The finished soup won’t be quite as silky.
- What can I use instead of soya sauce? Tamari works well, particularly if you need a gluten-free alternative. Coconut aminos can also be used, although they’re sweeter.
- What if I don’t have sesame oil? You can leave it out. The soup will still be good, although you’ll miss that distinctive sesame flavour.
- What if I don’t have spring onions? Use finely chopped chives or a small amount of finely chopped onion instead.
- How should the soup be stored? Cool it and refrigerate it in a covered container within 2 hours. It will keep for 3 to 4 days.
- How should I reheat it? Reheat gently on the stovetop over medium-low heat until piping hot. Avoid a vigorous boil because the egg can become grainy.
- Can the soup be frozen? For best texture, I wouldn’t freeze this soup after adding the eggs. The egg and thickened broth can become slightly grainy when thawed. If you want to prepare it ahead, make the chicken and sweetcorn base, freeze that, then add the egg and thickener after thawing and reheating.

- Category: Dinner Recipes

Ingredients
Sticky Ginger Garlic Chicken
- 6 to 8 chicken pieces
- 2 tbsps. garlic and ginger paste
- 1 tbsp. brown sugar
- 1 tbsp. Shaoxing rice wine, or dry sherry
- 1/2 tsp five-spice powder
- 1 tsp salt
- 1/2 tsp pepper
- 1/4 cup dark soya sauce
- 4 tbsps. water
Chicken Sweetcorn Soup
- 2 chicken breasts, bone in
- 4 cups water
- 1 tbsp. chicken stock powder
- 1 can cream-style sweetcorn
- 2 eggs, separated
- 2 spring onions, thinly sliced, divided
- 1 tbsp. corn starch
- 1 tsp soya sauce
- 1 tsp sesame oil
- Salt and pepper, to taste
Instructions
Sticky Ginger Garlic Chicken
- Add 2 tbsps. garlic and ginger paste, 1 tblsp brown sugar, 1 tblsp Shaoxing rice wine, 1/2 tsp five-spice powder, 1 tsp salt, 1/2 tsp pepper, 1/4 cup dark soya sauce, and 4 tbsp. water to a bowl. Stir until the brown sugar is mostly dissolved.
- Add 6 to 8 chicken pieces and turn them well so every piece is coated.
- Cover and refrigerate for at least 3 hours. If you can leave it overnight, even better.
- Take the chicken out of the refrigerator about 15 to 20 minutes before cooking.
- Shake off the excess marinade and arrange the chicken in a single layer in the air fryer basket.
- Air fry. Cook the chicken at 250⁰F (120⁰C) for about 20 minutes, turning halfway through.
- Cooking time depends on the size and type of chicken pieces, so check the thickest piece with a meat thermometer.
- Once cooked, increase the air fryer temperature to 400⁰F (200⁰C) and cook for another 2 to 4 minutes for a darker, stickier finish. Keep an eye on it because the brown sugar can burn quickly.
- Let the chicken rest for about 5 minutes before serving.
Shallow Frying Method
- Heat enough neutral oil to lightly coat the bottom of a large frying pan.
- Add the marinated chicken pieces, working in batches if needed, and cook over medium heat until browned and cooked through.
- For larger bone-in pieces, lower the heat once they’re browned so the chicken can cook through without the marinade burning.
Chicken Sweetcorn Soup
- Add 2 chicken breasts, bone-in, and 4 cups water to a large pot.
- Bring to a boil, then add 1 tbsp. chicken stock powder.
- Reduce the heat to maintain a gentle simmer and cook for about 20 to 25 minutes, or until the chicken is completely cooked through.
- Remove the chicken and let it cool enough to handle.
- Remove the bones and shred the meat with two forks. Return the shredded chicken to the pot.
- Stir in 1 can cream-style sweetcorn and bring the soup back to a gentle simmer.
- Add 1 tbsp. cornstarch to a small bowl. Whisk in a few spoonfuls of hot soup until smooth, then stir the mixture back into the pot.
- Beat the 2 egg yolks lightly. Slowly whisk a few spoonfuls of hot soup into the yolks, then gradually stir the warmed yolks back into the pot.
- Add 1 tsp soya sauce, 1 tsp sesame oil, salt and pepper to taste, and half of the 2 sliced spring onions.
- Simmer gently for 5 to 10 minutes until slightly thickened.
- Lightly beat the 2 egg whites. Slowly drizzle them into the gently simmering soup while stirring.
- You can also drizzle them over the back of a fork or through a large slotted spoon. Let them cook for 1 to 2 minutes.
- Taste and adjust the seasoning.
- Sprinkle over the remaining sliced spring onions and serve hot
