Adjusted recipe (feeds ±12 people):
4 x 250ml double thick cream
Mixed fresh berries, whatever available – ±1.5kg blackberries, strawberries, raspberries, cherries
3 x 110g Melissas (SA brand) Meringues (worthwhile to use the best quality available) – or any other very good quality available
1-2 tbsp Whisky (or more to taste)
±100-150g unsalted nuts – cashew, or whatever you prefer
Beat cream till just thickened
Pulp ±400g berries and fold into beaten cream, add whisky
In large bowl, layer 1/3 of broken meringues (if large ones used) or small ones, 1/3 cream mixture, 1/3 mixed berries, 1/3 nuts and repeat 2 more times till all ingredient’s used – finishing with layer of berries & nuts.
