Description

Start Your Day with a Delicious variation on Bread and try these Breakfast Sweet Corn Waffles.


Ingredients

Units Scale
  • 1 cooked corn on the cob
  • 1 cup cornflour
  • 1 cup plain wheat flour
  • 1 tablespoon mixed seed, ground
  • 1 cup chopped parsley
  • 1 small onion diced
  • 3 large eggs
  • 1/2 cup milk/buttermilk
  • 1/2 cup oil of choice
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon curry powder
  • 1/2 teaspoon cumin

Instructions

  1. In one bowl, blend the dry ingredients and include the corn and parsley.
  2. In another bowl blend all the wet ingredients and add to dry.
  3. Mix gently, do not over-mix.
  4. Allow standing for at least an hour.
  5. Heat the waffle maker and add two soup spoonsful of the mixture to each division.
