Ingredients
- 1 cooked corn on the cob
- 1 cup cornflour
- 1 cup plain wheat flour
- 1 tablespoon mixed seed, ground
- 1 cup chopped parsley
- 1 small onion diced
- 3 large eggs
- 1/2 cup milk/buttermilk
- 1/2 cup oil of choice
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon curry powder
- 1/2 teaspoon cumin
Instructions
- In one bowl, blend the dry ingredients and include the corn and parsley.
- In another bowl blend all the wet ingredients and add to dry.
- Mix gently, do not over-mix.
- Allow standing for at least an hour.
- Heat the waffle maker and add two soup spoonsful of the mixture to each division.
