  • Can this be frozen? Yes. Cut the fully set squares and place them in an airtight freezer container, separating layers with parchment paper. Freeze for up to 2 months for the best texture, then thaw in the refrigerator or at room temperature.
  • How long can it be stored and how? Store the squares in an airtight container in the refrigerator for up to 1 week. You can also keep them in a cool room for a few days, but the chocolate topping and texture are generally better when they’re refrigerated.
  • Can I use a different cereal? Yes. Any plain puffed rice cereal should work. Just avoid cereals that are heavily sweetened or flavoured, as they can make the squares overly sweet.
  • Can I use milk, dark or white chocolate? Absolutely. Milk chocolate gives you the sweetest, most Mars Bar like result. Dark chocolate balances the sweetness nicely, while white chocolate makes the squares much sweeter and creamier.
  • Can I use chocolate chips? Yes. Chocolate chips work well for the topping, although some varieties are designed to hold their shape when heated, so they may need a little extra stirring to become completely smooth.
  • What if the base won’t hold together? The most likely culprit is not pressing the mixture firmly enough into the tin. Make sure the Rice Krispies are well coated with the melted Mars Bar mixture and really press the mixture down before chilling.
  • What if the chocolate cracks when I slice it? The chocolate is probably too cold or has been cut straight from the refrigerator. Let the squares sit for about 5 minutes, then use a sharp, warmed and dried knife.
  • What if the chocolate topping is too thick? Spread it while it’s still warm and fluid. If needed, gently warm it again rather than adding liquid, which can affect how the chocolate sets.

Ingredients

  • 85 g (approx.) – 3 cups Rice Krispies or other puffed rice cereal
  • 52 g x 3 Mars Bars, chopped and divided
  • 75 g butter
  • 5 ml1 tsp golden syrup
  • 200 g baking chocolate or chocolate chips

Instructions

  1. Add 75 g butter, 1 tsp golden syrup and 2 of the Mars Bars, chopped, to a saucepan.
  2. Warm over low heat, stirring often, until everything has melted together and looks smooth. Don’t let it boil.
  3. Remove the saucepan from the heat and stir in 3 cups Rice Krispies until they’re evenly coated.
  4. Add the remaining Mars Bar, chopped, and give everything a quick stir. A few little chunks of Mars Bar are exactly what you want here.
  5. Line an approximately 20 cm square baking tin with cling film, leaving a bit of overhang so the squares are easy to lift out later. Tip in the mixture and press it down firmly and evenly. Use the back of a spoon or lightly dampened fingertips for this part.
  6. Refrigerate for about 30 to 45 minutes, or until the base feels firm enough to support the chocolate topping.
  7. Melt 200 g baking chocolate or chocolate chips gently in the microwave in short bursts, stirring between each one, or place it in a heatproof bowl over a saucepan of gently simmering water. Stir until completely smooth.
  8. Spread the melted 200 g chocolate evenly over the chilled Mars Bar base.
  9. Return the tin to the refrigerator for at least 1 hour, or until the chocolate is fully set. Give it the full chilling time if you want clean slices rather than chocolate that smears everywhere.
  10. Lift the slab from the tin using the cling film. Let it sit at room temperature for about 5 minutes, then use a sharp knife to cut it into 16 to 20 squares. For cleaner cuts, warm the knife under hot water, dry it well, then slice.
