I have made this just now for our brunch. I hope you will like this.
8 big pancakes
Ingredients:
3 cups flour
1 sachet baking powder (15 grams)
1 cup fresh milk (I used low-fat milk)
3 eggs
1½ teaspoon cinnamon
1 apple, grated
1 cup brown sugar (I used my sugar cane sugar, leftover from baking cakes)
Butter or margarine for frying
Method:
Sieved the flour and baking powder together.
Add the sugar, eggs, and milk. Mix them well in an electric mixer or just like how I did it by using a whisker.
Then add the grated apple by just grating it over the flour mixture.
Mix well and then add the cinnamon.
Heat a small frying pan over a moderate heat and put a small piece of butter or margarine before putting the batter in the frying pan.
Fry both sides until golden brown.
Serve with maple syrup or honey.

This recipe will give more than 8 pieces. It depends on how big or small the portion is.
I used ice scooper in putting the batter in the frying pan.
I put 3 scoopers of batter in every pancake I have made.
To get a small size, you just put 1 or 2 scoops in the frying pan.
BTW, I have used my coffee cup in measuring the flour and sugar.
I hope I have not forgotten something.
