Description
Craving something sweet but short on time? These Easy No-Bake Coconut Toffee Balls are chewy, crunchy, and come together in minutes. Perfect for holiday trays, freezer treats, or a quick bite when you need it most
Ingredients
- 6 toffee bars (McIntosh if you can find them)
- 6 tbsp butter
- 2 tbsp cream
- 1 tsp vanilla
- Pinch of salt
- 5 cups cornflakes (or a 500g box of Morning crisp cereal: Crisp cereal clusters with flaked almonds, roasted hazelnuts, chopped Brazil nuts, and chopped pecan nuts)
- 2/3 cup shredded coconut
Instructions
Break the toffee bars into small pieces. Place in a saucepan with the butter and cream.
Warm over low heat, stirring until everything melts together into a smooth mixture.
Stir in the vanilla, salt, cornflakes, and coconut. Mix until the cereal is well coated.
Drop a spoonful of the mixture onto a sheet of wax paper.
Lightly butter your fingertips and gently press each mound together so it holds its shape.
Let them cool and set. Store in an airtight container. These also freeze well.

- Microwave method: Instead of melting on the stove, place the toffee, butter, and cream in a microwave-safe bowl. Heat on low in short bursts, stirring often, until smooth.
