Description

A proper Unbaked Chocolate Tiffin is one of those treats that disappears faster than you expect. It’s rich, chocolatey, slightly crunchy in places, and ridiculously easy to put together when you want something sweet without turning the oven on.


Ingredients

Units Scale
  • 110 g butter
  • 25 g2 tbsp sugar
  • 45 g (approx.) – 2 tbsp golden syrup
  • 10 g (approx.) 4 tsp cocoa powder
  • 225 g digestive biscuits, crushed with a few chunky bits left in
  • 115 g milk chocolate
  • 115 g dark chocolate

Instructions

  1. Line a Swiss roll tin or an 8×8-inch tin with parchment paper.
  2. It makes lifting the Tiffin out much easier later, especially once the chocolate sets hard.
  3. Add the 110g butter, 2 tbsp sugar, 2 tbsp golden syrup, and 4 tsp cocoa powder to a saucepan over low heat.
  4. Stir gently until everything melts together into a smooth chocolate mixture. Don’t rush, as the cocoa can turn grainy.
  5. Remove the saucepan from the heat and stir in the 225g crushed digestive biscuits.
  6. Leaving a few chunky biscuit pieces gives the tiffin a better texture and stops it from feeling too dense.
  7. Spoon the mixture into the prepared tin and press it down firmly with the back of a spoon or the bottom of a glass, because if it’s packed loosely, the slices can fall apart later.
  8. Melt the 115 g milk chocolate and 115 g dark chocolate in two separate bowls, in the microwave using 30-second bursts, stirring well between each round. Stop as soon as it’s smooth. Chocolate keeps melting from its own heat, so don’t overdo it, or it can scorch.
  9. Pour the melted chocolate over the biscuit base and spread evenly right to the corners.
  10. Add the white chocolate and create a swirl pattern as desired.
  11. Refrigerate for at least 2-3 hours, or until fully set.
  12. Before slicing, leave the tin at room temperature for about 10 minutes.
  13. This will prevent the chocolate topping from cracking too much when cut.
  14. Slice into about 20 squares (depending on size) or bars and serve.
