These are the softest, quickest and easiest cupcakes ever, do try these vanilla cupcakes and Krush clover orange juice snowballs!
Ingredients:
125 g (¼ pound) butter OR Stork Bake
3 eggs
¾ cup sugar (200 ml)
1½ cup flour
¾ cup Krush Clover Orange juice (200 ml)
3 teaspoons Baking powder
Method:
Mix butter, sugar, eggs, flour, and orange juice all at once for 7 mins on high-speed.
Lastly, add baking powder and mix on high for 1 minute
Bake at 180C in medium muffin tins for 15 minutes
For variation add 3 teaspoons of cocoa and make chocolate cupcakes.

Bake cupcakes in paper cups and when it bakes and cool off remove paper cups.
Melt apricot jam in a pan and add a little water until smooth.
Dip side in jam mixture and roll in fine coconut for snowballs
Pipe fresh cream on top and add any Caramel treat piping OR fruit filling in the center for cupcakes. (makes 21)

I doubled the above recipe for ± 42 snowballs or cupcakes.

This is a very interesting recipe, Esme. It is the second recipe with orange juice in it that I have seen this week in a mixture I would not have thought to put it in.
