Vashnee's Hungarian Tart

125g butter/margarine
2 tablespoons vegetable oil
2 Tablespoons sugar
1 egg
2 cups flour
2 teaspoons baking powder
1 teaspoon vanilla essence
Smooth apricot Jam
Preheat oven to 180°C
Grease a baking pan
Cream Butter, sugar and oil until light n creamy
Add egg and vanilla essence and beat well
Sift flour and baking powder and add to butter mixture
Mix to form a smooth soft dough.
Divide dough into 2 portions
Pat one half into baking pan
Spread apricot jam on top
Grate the second portion over the jam (if dough is too soft to grate, place in the freezer for 15 mins)
Bake at 180 °C for 30-35 mins
Cool and cut into desired shape.
