This is the only vanilla cupcake recipe you will ever need!!
Ingredients:
1½ cups self-raising flour
1¼ cups all-purpose flour
1 cup soft butter
2 cups granulated sugar
4 large eggs, room temperature
1 cup milk
2teaspoons vanilla ess or 1tsp vanilla extract.
Method:
Preheat oven to 180°C
Sift flours
In a separate bowl, beat butter, add sugar gradually until light n fluffy, approximately 4 minutes
Add eggs, one at a time, mixing well after each addition
Add vanilla essence
Add milk n flours alternately
Do not over mix
Bake at 180°C 20-25 minutes
Vanilla buttercream
Ingredients:
100g soft butter
250 g icing sugar sifted
1 teaspoon vanilla essence
Milk(add to obtain piping consistency)
Method:
Beat butter until light and smooth
Add icing sugar n beat until light n fluffy
Add vanilla essence
Adjust consistency of icing by adding a little milk.
