200g caster sugar
4 medium eggs
2 teaspoons vanilla essence
200g self raising flour
1 teaspoon baking powder
Preheat oven to 180°C
Beat sugar and butter until light n fluffy
Add vanilla essence and mix in
Beat in 2 eggs, mix well
Add half of the flour and mix
Add remaining 2 eggs and mix well
Finally add remaining flour and baking powder and mix till nicely incorporated.
Spoon batter into lined muffin tin and bake for approx 15-25 mins, reach slightly golden brown stage.
Strawberry Buttercream icing
½ cup Butter
Pinch of salt
3 cups icing sugar
1 teaspoon strawberry essence
Few drops pink gel colour
Mix butter, icing sugar and salt until smooth and creamy
Add more icing sugar to reach desired consistency
Colour to your liking.
