Topping

Instructions

  1. Allow cream cheese to soften to room temperature.
  2. In a large bowl, blend the room-temperature cream cheese, cheddar cheese, onion powder, garlic powder, salt, pepper, paprika, and cayenne pepper until well incorporated and smooth.
  3. Place the bowl in the fridge for about a half-hour to set and firm up.
  4. Use a 5 ml measuring spoon to make uniform balls.
  5. Roll the ball with your hands to get an even round shape.
  6. Stir together the topping ingredients.
  7. If needed, you can drop it in a small electric chopper and blitz it max 4 times, depending on how big the pecans. It should not be paste, it needs to be still bits and pieces.
  8. Roll the cheese balls in finely chopped mixture and coat it completely.
  9. Leave it on a parchment lined baking tray and use a thin pretzel stick as a skewer and stick it in the ball.
  10. Add the pretzel stick just before serving, otherwise it will get soggy and go soft.
  11. Transfer it to the fridge to set as it will become soft from working with it as your hands are warm.
  12. Once set transfer to an airtight container and leave it in the fridge until ready to serve.
