Description

Get your Fruity Seedy Vegan Gluten-free Energy Balls today and feel the difference in your energy levels. Perfect for on-the-go snacking, a pre-workout boost, or just a healthy treat!

Instructions

  1. Combine all the ingredients, except the shredded coconut in a LARGE bowl.
  2. Mix by hand until all is well incorporated and combined and it sticks and holds together in a ball.
  3. Refrigerate until cold before you start to shape them.
  4. Use a dessert spoon, or 12.5 ml scoop and form balls (you can do bigger balls if you prefer) and once done roll in coconut
  5. I measured the first 12 or so and then continued by eyeballing them for size.
  6. Place a sheet of parchment paper on a baking tray.  Drop the shredded coconut on the parchment paper.
  7. Form the balls and lightly drop on the coconut and when you have about 12 or so, roll and cover them in the coconut.
  8. Continue until all is done.
  9. If you have any coconut left, move the balls around in the coconut and do your best to get as much of it on the balls.
  10. Leave it on the tray in the fridge to set and then store it in an airtight container in the fridge or if needed you can also freeze it.

  1. This is what I need! Something sweet but still nutritious! I do find it hard to find vegan chocolate chips though. Sometimes the dark, but most still contain milk.

    • I first tasted this on a trip earlier this year and then the shop owner graciously gave me the recipe and I adapted it to this one and I enjoyed it a lot. Hope you will try it out.

  3. Curious why the tahini instead of just peanut butter?
    And would any dried fruit work for this? E.g. dates, apricots, or do you think the flavour combo works particularly well with raisins and cranberries?

    • Pritu. Good question why Tahini. I had a pot in the pantry and wanted to use what I had. Add for the fruit I am sure you can test others although I have only used this combo and I love it. Let me know how you adapt it and how it turned out. Enjoy
