These little cakes came from not wanting to waste leftover vegan yogurt, and honestly, they turned out better than expected. They’re soft, slightly sweet, and easy enough to throw together in a hurry
Ingredients
- 500 ml – 2 cups Self-Raising flour
- 175 ml canola oil
- 15 ml psyllium husk (about 1 tbsp)
- 60 ml applesauce (about 1/4 cup)
- 375 ml – 1 1/2 cups berry sugar (or regular fine granulated white sugar)
- 375 ml – 1 1/2 cups vegan yogurt
- 100 g Craisins
- 62.5 ml – 1/4 cup dried coconut slices or sliced almonds for topping
- 12.5 – 25 ml – 1 to 2 tbsp icing sugar for dusting
Optional
- 5 ml – 1 tsp cinnamon
Instructions
- In a small bowl, mix 15 ml of psyllium husk with 60 ml of applesauce.
- Let it sit for about 5 minutes until it thickens slightly and becomes a bit gel-like.
- Preheat your oven to 350⁰F (180⁰C). Lightly grease a mini Bundt cake pan or a large Bundt pan, or, for that matter, any cake pan you have available.
- In a large bowl, add 2 cups Self-Raising flour, 1 1/2 cups berry sugar, and 100 g Craisins and give it a quick mix so the fruit doesn’t clump.
- Pour in 175 ml canola oil and 1 1/2 cups vegan yogurt. Stir gently, it will look a bit thick at first, that’s fine.
- Add the applesauce and psyllium mixture. Mix everything until just combined. Don’t overmix, as you do not want a dense cake. The batter should be soft and scoopable.
- Spoon the batter evenly into your prepared pans. Fill about 3/4 full.
- Sprinkle the tops with dried coconut slices or almonds.
- Add 1 tsp cinnamon here if you’re using it.
- Bake at 350⁰F (180⁰C) for 25 to 30 minutes, or until a skewer comes out clean. Start checking at 25 minutes as ovens vary.
- Let the cakes cool in the pan for about 10 minutes, then transfer to a rack to cool completely.
- Dust with icing sugar once fully cooled. If you do it too early, it just melts in.
