I admit I still make mistakes, I am human, but you have to be able to acknowledge your own mistakes, and learn from it in order to grow. 

Well, I did some baking this weekend, and oh boy, did I make a boo-boo and only realized it when I wanted to rework the recipe and add the changes I made when I noticed I totally misread one of the quantities of an ingredient when mixing it.

Cheesy Oat Fibre Scone


Ingredients
:
3/4 cup of Oat Fibre
1/2 tbsp baking powder
5 eggs at room temperature
1/3 cup melted butter (6 tbsp)
1/2 tbsp psyllium husk powder
1/4 cup of cream (same as one egg) 
1/2 cup of grated cheddar cheese

 
 
 
Method:
Combine all the ingredients, but the psyllium husk powder with a whisk until smooth.
Then sprinkle the husk powder in and mix well to combine.
You can use some spray and cook or any Cake Release mixture to coat 10 muffin tin wells.
Place in a preheated oven at 350°F for 15-20 mins depending on size until lightly golden brown.
If you prefer you can also just place 10 scoops of dough on a baking sheet as buns.
 
Bakers Note:
And now that I updated and reworked the recipe for a post, it dawned on me that I made a HUGE boo-boo but fortunately it’s a rather forgiving recipe, and it still turned out great. I used way too much psyllium husk, as I misread the ingredients while working and reading the recipe directly from my computer screen!
 
Do not do that, rather have it printed out and keep it next to you when measuring out the ingredients and baking. Despite the overuse of psyllium husk, it’s delicious. As you can imagine, my ‘dough’ was way more ‘solid and stiff’, it will be a wetter consistency with the correct amount of psyllium husk.
 
Next time, so we all learn.  Fortunately, I am still able to enjoy the Cheesy Oat Fibre Scones.  When getting them ready for breakfast during this upcoming week, I will heat them up slightly in the microwave and add an extra big dollop of butter on them with coffee.
 
So we all learn.
